Trying to stick to this month’s theme so I’ve decided to steer away from the cakes and cookies and try something a little more “sport” friendly. For those of you who plan on having some friends and family over to watch the game, I’ve come across some delicious dips! My most favorite had to be this Jalapeno dip a friend of mine shared not too long ago. I tweaked the recipe a bit (It didn’t seem hot enough at first, so I added more jalapenos.) So I present to you:
Jalapeno Popper Dip
Ingredients:
2 (8 ounce) packages of cream cheese
1 cup mayonnaise (Dukes makes the BEST Mayo - Just a suggestion)
1 cup shredded mild cheddar cheese
1 cup shredded or grated parmesan cheese
2 (4 ounce) cans of sliced jalapenos
2 jalapeno peppers - Chopped
1/2 cup panko bread crumbs
1/2 cup parmesan cheese (Shredded or grated)
Directions:
1. Preheat oven to 350 degrees
2. In a large bowl, mix cream cheese, mayonnaise, cheddar cheese, parmesan cheese and jalapenos.
3. Pour mixture into a glass baking dish.
4. On top of mixture, sprinkle panko bread crumbs and ½ cup of parmesan cheese.
5. Let bake for about 20 minutes or until sides begin to bubble and top is a golden brown color.
5. Serve with bread, chips, crackers, or your favorite vegetables.
