Ingredients for the Cake:
- 3 cups of all purpose flour
- 2 cups sugar
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- 3 eggs
- 3-4 ripe bananas (mashed)
- 1 cup vegetable oil
- 8 oz can of crushed pineapple
- 1 cup chopped pecans or walnuts
Ingredients for the Icing:
- 16 oz softened cream cheese
- 1 cup softened butter
- 3 cups powdered sugar
- 2 teaspoons vanilla extract
Directions:
1. Pre-Heat oven to 350 degrees.
2. Spray 3 - 9 inch round pans and set aside.
3. In large mixing bowl, combine flour, sugar, salt, cinnamon, and baking soda.
4. Slowly mix in eggs, banana, vegetable oil, pineapple and vanilla extract.
5. Stir in the chopped pecans.
6. Divide batter up between the three baking pans.
7. Bake for 25-30 minutes (or until toothpick comes out clean after inserting it into the middle of the cake.)
8. To make the frosting, use a mixer to beat together cream cheese, butter, powdered sugar and vanilla extract. Once mixed thoroughly, place in fridge until cake is done baking.
9. Once cake layers are cooled, layer each cake with frosting. You can even sprinkle chopped walnuts on top of the cake for decoration.
